Monteveglio cheese factory

Twice a day, all the milk produced in our breeding is collected and used in the factory of Monteveglio where they produce each day 44 forms the well-known and authentic Parmigiano Reggiano cheese as well as fine cheeses like Caciotta, Ricotta and Stracchimella.

Frequent checks and the great care given to all the stages of production enable us to offer high quality products, made ​​in full respect of nature with careful application of European Community legislation.

Parmigiano Reggiano
To produce the Parmigiano Reggiano the evening milking the milk is left to rest all night in large tanks, letting the cream is only on the surface with the natural surfacing: in this way the qualitative characteristics of our milk remain unaltered to give the final product the best flavor and the best olfactory sensations.
This semi-skimmed milk is mixed with the whole of the morning milking in order to get the right ratio of fat.
So our expert cheesemakers produce every day Parmigiano Reggiano, carrying on a centuries-old tradition of our country.
